Sweet Potato and Lentil Soup with Bacon

6 thick laces of bacon cut into lardons

1 large yellow onion, diced

2 large sweet potatoes, peeled and diced

2 large carrot, diced

8 cups chicken stock

2 tablespoons yellow curry powder

Freshly ground pepper to taste

Large handful of cilantro leaves

1 tablespoon of olive oil

2 cups French green lentils

2 tablespoons of Sherry vinegar


Set large pot over medium heat, and one tablespoon of olive oil and cut the bacon until the fat renders and it begins to crisps.  Remove bacon with slotted spoon and reserve.

In the same pot, remove all but 1/4 cup of bacon fat and add onions, carrots, salt and pepper to taste and 2 tablespoons of curry powder.  Cook in the bacon fat over medium heat until soft (6-8 minutes).

Add the sweet potatoes, 2 cups of lentils, and 8 cups of chicken stock and bring to a simmer.  Reduce the heat on low and cook for 30-40 minutes or until potatoes and lentils are tender.

Add 2 tablespoons of Sherry vinegar and taste the soup.  Add more and salt pepper as needed.  Add the bacon back into the soup.  Garnish with cilantro.
