Spicy Tuna Crispy Rice
Ingredients:
2 cups sushi rice (rinsed well)
3 cups water
1 teaspoon salt
1/4 cup rice vinegar
2 tablespoons granulated sugar
1 teaspoon sesame oil
1 pound ahi tuna (finely chopped into small pieces)
1/4 cup mayonnaise (Kewpie mayo preferred)
3 tablespoons sriracha
1 tablespoon soy sauce
2 teaspoons sesame oil
juice of 1/2 lime
1/4 cup green onions (thinly sliced)
vegetable oil (for frying)
soy sauce (for dipping)
avocado thinly sliced or mashed
spicy mayo to drizzle on top
toasted sesame seeds to garnish on top
Recipe:
To make the Sushi rice wash your sushi rice until the water runs clear
Put it in the rice cooker and cook until done
Once the rice is finished cooking prepare the rice seasoning by mixing the rice vinegar, sugar, and sesame oil in a bowl until fully dissolved, and evenly distributed over the rice and mix.
In a large pan pour rice in a flatten out for desired thickness. Then put it in the fridge for 1 to 2 hours till it's cold and easy to slice.
Cut the rice into rectangles and place on a hot pan with oil. Once golden brown on one side flip till it reaches golden brown on the other side.
Place on a paper towel to get rid of any excess oil
Now make the spicy tuna. In a bowl add finely diced tuna, mayonnaise, sriracha, soy sauce, sesame oil, lime juice, and sliced green onions.
Add thinly sliced avocado on top of the fried rice square and on top of that add an appropriate spoonful of the spicy tuna.
Drizzle spicy mayo on top and sprinkle on sesame seeds, then enjoy!
