Spicy Tuna Crispy Rice
Ingredients:
  • 2 cups sushi rice (rinsed well)

  • 3 cups water

  • 1 teaspoon salt

  • 1/4 cup rice vinegar

  • 2 tablespoons granulated sugar

  • 1 teaspoon sesame oil

  • 1 pound ahi tuna (finely chopped into small pieces)

  • 1/4 cup mayonnaise (Kewpie mayo preferred)

  • 3 tablespoons sriracha

  • 1 tablespoon soy sauce

  • 2 teaspoons sesame oil

  • juice of 1/2 lime

  • 1/4 cup green onions (thinly sliced)

  • vegetable oil (for frying)

  • soy sauce (for dipping)

  • avocado thinly sliced or mashed

  • spicy mayo to drizzle on top

  • toasted sesame seeds to garnish on top


Recipe:

  • To make the Sushi rice wash your sushi rice until the water runs clear

  • Put it in the rice cooker and cook until done

  • Once the rice is finished cooking prepare the rice seasoning by mixing the rice vinegar, sugar, and sesame oil in a bowl until fully dissolved, and evenly distributed over the rice and mix.

  • In a large pan pour rice in a flatten out for desired thickness. Then put it in the fridge for 1 to 2 hours till it's cold and easy to slice.

  • Cut the rice into rectangles and place on a hot pan with oil. Once golden brown on one side flip till it reaches golden brown on the other side.

  • Place on a paper towel to get rid of any excess oil

  • Now make the spicy tuna. In a bowl add finely diced tuna, mayonnaise, sriracha, soy sauce, sesame oil, lime juice, and sliced green onions.

  • Add thinly sliced avocado on top of the fried rice square and on top of that add an appropriate spoonful of the spicy tuna. 

  • Drizzle spicy mayo on top and sprinkle on sesame seeds, then enjoy!
