Scrambled Eggs for Breakfast









The following is, in my opinion, the ultimate scrambled egg recipe.  A lot of people don't like Gordon Ramsay as a person, but as a chef he is one of the best in the world.  Every time I've cooked a recipe of his it's turned out great.

Ingredients:
  • 6 cold eggs
  • Tablespoon butter
  • Salt and pepper
  • Crème fraîche
  • Chives
Instructions:
  1.  Crack 6 cold eggs in a deep saucepan.
  2. Add the butter.
  3. Put the pan on high heat.
  4. Stir continuously with a rubber spatula--don't wisk--making sure to scrape the bottom of the pan
  5. After 30 seconds, take the pan off the heat. Keep stirring. After about 10 seconds, put back on the heat.  Repeat that process for three minutes.
  6. In the last minute, season the eggs lightly with salt and pepper.  For extra creamy texture stir in  a teaspoon of crème fraîche. 
  7. Plate and garnish with chives. 
To really take this to a new level, cut a day old croissant length-wise and put in a dry skillet at toast slightly.  Then take some lox (cold smoked salmon) and put on the toasted croissant.  Top with the eggs and garnish with the chives.
